Rice Flour Khichu

 

Khichu

Khichu is a gujarati recipe that is made from rice flour. Special type of rice flour is used to make it. If unavailable, flour from small rice can be used. It is one of the famous street food in Gujarat region. It is different from the one made to prepare rice papad. 

For your evening cravings, you can easily and quickly make this and enjoy it with your favourite beverage. It does not require many ingredients yet it is tricky to make. All you need is rice flour with you. You can watch the video below to see how to make smooth and shiny khichu. It will not take more than 15 minutes to make it.

I will share detail of the ingredients and steps on how to make it. 

Preparation Time: 2-3 mins
Cooking time: 10-15 mins

Ingredients: 
  • Water - 3 cups
  • Jeera - 1 teaspoon
  • Ajwain - a pinch
  • Green chilies - 3 4 pieces
  • Salt - 2 teaspoon
  • Rice flour - 1 cup
  • Groundnut oil - 2 teaspoon
  • Red chili powder - 1/2 teaspoon


Method:
  1. Take a heavy base deep vessel and add water into it.
  2. Let the water to turn luke warm.
  3. Then add jeera, ajwain and green chilies into it and let it boil for 2 minutes.
  4. Now add salt and mix it.
  5. Add rice flour and whisk rigorously to avoid any lumps to form. 
  6. Whisk it at low flame.
  7. After 1 minute, cover it for 2 minutes.
  8. After 2 minutes, khichu will be cooked and become smooth.
  9. Whisk it for another 1 minute and then switch off the flame.
  10. Serve it hot and while serving add groundnut oil and red chili powder on the top.
  11. Enjoy it with your loved ones.
