Homemade Ice Cream | Vanilla Ice Cream
There is no age group for ice cream lovers. Be it any occasion or any day, everyone loves to eat ice cream. It comes in many flavours but the basic one is Vanilla. In early days, making it was time-consuming but with advancement now anyone can make ice creams at home. There are different ways to make it. Some recipes need ice cream machines while some need electric beater.
For making Ice-cream the main ingredient is cream. Whipped cream is used as it has tendency to double in size and is also very smooth textured. Some recipes also add GMS (Glycerol monostearate) and CMC (Carboxy methyl Cellulose) powder, which is used to thicken, preserve and stabilize the ice-cream. Though use of these two powders gives perfect texture to ice-creams but it is not healthy to eat. Whipped cream helps to make ice-cream texture perfect but it does not make it stay solid for long. That is the beauty of Homemade Ice-cream. It has to be bit different from store bought.
Today I will share basic ice-cream recipe, which you can use to make any flavoured ice-cream of your choice. It would take around 1 hour to make ice-cream while it needs atleast 12 hours to freeze it. It can be topped with chocohips, roasted dry fruits or chocolate syrup and many more. Lets start with the recipe.
Cooking Time: 10-12 mins
Freezing time: 12 hours
Ingredients:
- Milk - 1 cup
- Corn flour - 1 tablespoon
- Sugar - 1 tablespoon
- Whipped Cream - 1 cup
- Vanilla Essence - 3-4 drops
- Roasted dry fruits - 1/3 cup
Method:
- To make homemade ice-cream, you need to first boil milk in a heavy base pan. Milk should be cold or room temperature.
- In a small bowl, add cornflour and few spoons of cold milk to make a liquid mixture.
- Now add this mixture to the boiled milk and keep stirring it occasionally.
- Add sugar and keep stirring it.
- The milk will thicken in few minutes.
- Turn off the flame once it has thicken.
- Let it cool down completely. Keep stirring it even after turning of the flame. This will avoid any lumps.
- Take a large bowl and add some ice cubes in it.
- Take another bowl and place it on large bowl.
- Add whipped cream to the bowl and whip it with electric beater for a minute.
- Then add thickened and cooled milk, vanilla essence to it.
- Whip it for another 2-3 minutes till soft peaks appear.
- Now freeze this mixture for atleast 2 hours.
- Again whip it for 2-3 minutes.
- Now transfer it into an air-tight container and freeze it for 8-10 hours.
- Serve it with some chocochips on the top.
