Hara Bhara Kebab


 India is a country where there are number of snack options. Kebab is one of them. Now kebab is actually a non-vegetarian snack. The word kebab itself means roasted meat. But long ago it happened that an Indian vegetarian king asked his cook to make something so creamy and melt-in mouth that tasted like non-vegetarian kebab but is vegetarian. That was the time when vegetarian kebabs gained fame.

These are perfect party starters or appetizer. You will see them in most of the restaurant menu. They usually freeze them after shaping them and when you order it, they deep fry and serve it to you. This step can be done at home too if you have frequent guests at your home. It tastes great with green chutney that is made in minutes.

Hara bhara kebab is like the name suggests. It is green in colour and is also nutritious. It is prepared mainly with spinach and potatoes. It is a quick recipe and does not require any expertise. It is best eaten during winters as greens are easily available in that season. In addition to spinach, capsicum, french beans, green peas are also added to make it taste delicious. This all the ingredients are usually moist, and so corn flour and bread crumbs are added to it to make it dry. It is important because when you deep fry or shallow fry kababs they may break.

Ingredients:
  • Spinach - 1 bowl
  • Capsicum - 1 medium sized
  • Green peas - 1/2 bowl
  • Potatoes - 4 medium sized
  • Corn flour/Rice flour - 2 tablespoon
  • Makkai ka aatta - 2 tablespoons
  • Cooking oil - 1 tablespoon
  • Zeera - 1 teaspoon
  • Salt - 1 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin powder - 1/4 teaspoon
  • Turmeric powder - 1/4 teaspoon

Method:
  1. You have to start with blanching spinach. It will take about 2-3 minutes. Then put it in cold water so its colour is retained.
  2. Meanwhile, boil potatoes.
  3. Next, in a pan, heat oil, add zeera, blanched spinach, capsicum, green peas and roasted it till it becomes dry. 
  4. Now add all the spices and roast it for a minute.
  5. Add makkai ka aatta and roast for a minute.
  6. Remove it from flame and let it cool down.
  7. Once it cools down, transfer it in a bowl, add boiled and mashed potatoes, makkai aatta, corn flour or rice flour.
  8. Mix everything well and make small round shape of that mixture.
  9. Coat it with makkai ka aatta and dust off extra flour.
  10. Deep fry them till it turns golden brown and crispy.
  11. Serve hot with green chutney.
