Lemon Coriander Soup
It is widely observed that people worldwide are getting health conscious. Everyone has understood the benefits of staying healthy and being fit. It is said that 80% of your health depends on the type of food eaten and 20% includes physical activities. There has been a shift from unhealthy unhygienic food to healthy and wholesome meal from couple of years.
There is also a shift in lifestyle of humans. Earlier people used to cook many food items for a meal but with a constraint of time, this has shrunk to one item at a time. In such times, soups are wholesome and less time consuming. Soups are usually broth of cereals and vegetables cooked differently.
Lemon coriander soup is rich in vitamin C. It is easy to cook along with the goodness of vegetables. It can be consumed when in deficiency of vitamin C or even during cough and cold. It can be included in weight loss diet or when serving guests. Lets have a look at the ingredients and way to cook it to get maximum health benefit.

Ingredients:
- Cooking oil - 1 tablespoon
- Garlic - 5-6 cloves (chopped)
- Ginger - a pinch (grated)
- Green Chillies - 1 piece (chopped)
- Onion - 1 small size (chopped)
- French beans - 1/4 cup (chopped)
- Carrot - 1/4 cup (chopped)
- Cabbage - 1/4 cup (shredded)
- Boiled Corn Kernels - 1/4 cup
- Salt - 1 teaspoon
- Black pepper powder - 1/4 teaspoon
- Water - 6 cups
- Lemon juice - extract of 1 big lemon
- Coriander - 1 cup (chopped)
- Cornflour liquid - 1 tablespoon
Lemon Coriander Soup
Method:
- In a large pan or wok, add cooking oil.
- Let the oil heat and then add chopped garlic and grated ginger.
- Then add chopped green chillies and saute it for few seconds.
- Now add chopped onions and saute it for a minute or two.
- Next, add chopped french beans and carrot. Saute it well.
- Then add cabbage and boiled corns.
- Once all the vegetables are sauteed well, then add salt and black pepper powder.
- Now add water and bring it to a boil.
- Then add lemon juice and chopped coriander. Let it simmer for a minute.
- Lastly add cornflour liquid to thicken the soup.
- Serve it hot.
