Corn capsicum masala recipe is a north indian sabji recipe with thick gravy. It is smooth and rich curry. It is really easy and less time consuming recipe. Though it can be made in different way, it is authentically made with just corn and capsicum as the main ingredients. Alternatively, paneer, potato, and other vegetables can be added to corn capsicum masala recipe.

It is also important to note that capsicum is not advisable to everyone. It has a strong taste which can be harmful in certain infections. It is always suggested to eat capsicum in moderation if you have any type of infection.

Corn capsicum masala recipe is made into gravy with onion and tomato. It is usually a little spicy sabji but it can be altered as super spicy by adding more green chilies and a bit sweet by adding more cashew paste. It goes well with tandoori roti or paratha. Lets dig into the ingredients and method of cooking.

Preparation Time: 10 mins
Cooking time: 25-30 mins

Ingredients:

  • Butter - 1 tablespoon
  • Oil - 1 tablespoon
  • Onion - 2 medium size (chopped)
  • Tomato paste - 2 tomatoes, 1 green chili, 4 garlic cloves, 1/2 inch ginger
  • Kaju paste - 5 kaju soaked in 1/4 cup milk for 15 minutes
  • Red chilli powder - 1 tsp 
  • Cumin coriander powder - 1 tsp 
  • Garam masala - a pinch 
  • Water - 1/2 cup
  • Green capsicum - 1 1/2 cup
  • Sweet corn - 1 1/2 cup

Method:

  1. Firstly, add butter and oil in the pan. Let it melt. Then add chopped onion. Saute it till it turns golden brown.
  2. Meanwhile, in a small grinder add tomatoes, green chilli, garlic cloves and ginger. Grind it to make fine paste. 
  3. Once the onions are done, add tomato paste.
  4. Cook it till oil separates and tomato is cooked.
  5. Then add cashew paste. Cook it for few minutes.
  6. Then add little water and add all the spices.
  7. Let the spices cook well. 
  8. Then add water to make smooth gravy.
  9. Let the water boil, now add diced capsicum.
  10. Simmer it for 2-3 minutes with a lid.
  11. Remove the lid and see if capsicum is cooked. 
  12. Then add corn kernels.
  13. No need to cook it. Just mix it well and corn capsicum masala is done.
  14. Serve it with some salad and pudina paratha.
