Quick and tasty recipes are always are favorite as we become tired cooking new everyday and same kind of vegetables become so monotonous to eat. Sev tamatar is one such recipe that gives a change to regular vegetables. It is super easy to cook and require no much preparation. It goes very well with regular chapati/roti. Lets look at how it is cooked.

Preparation Time: 2 mins
Cooking time: 15 mins

Ingredients:
  • Cooking oil - 1 tablespoon
  • Mustard seeds(rai) - 1 teaspoon
  • Asafoetida(hing) - a pinch
  • Ginger garlic chilli paste - 1 teaspoon
  • Onion - 1 small size(chopped)
  • Tomato - 1 small size(chopped)
  • Spicy sev(preferably thick one) - 1 cup
  • Salt to taste
  • Red chilli powder - 1/2 teaspoon
  • Turmeric powder - a pinch
  • Garam masala - a pinch
  • Sugar(optional) - 1/2 teaspoon
  • Water - 2 cups
Method:
  1. In a deep pan, add oil. let oil heat well, then add mustard seeds.
  2. Once seeds splutter, add asafoetida. Then add ginger garlic chilli paste.
  3. Saute it for few seconds. Then add chopped onions. 
  4. Saute it till onions turn pink or translucent.
  5. Then add chopped tomatoes. Saute it till tomatoes become soft and mushy.
  6. Cover the pan with lid for 2 minutes.
  7. Then add all the spices: salt, red chilli powder, turmeric powder, garam masala and sugar.
  8. Saute spices for few seconds and add water.
  9. Let water boil and then add sev.
  10. Let it cook for a minute on high flame and then switch off the flame.
  11. Do not cover the pan.
  12. Serve hot with chapati/roti.
