Moong Dosa

Moong is also known as whole green gram. Moong contains amino acid, which is not naturally available to our bodies. It also contains many antioxidants. It reduces heart diseases risk as it lowers down "BAD" cholesterol level. Moong is sometimes eaten as salad when it is sprouted. 

Moong dosa is a newer version of regularly cooked moong. It requires very little oil and it can be cooked quickly. It is stuffed with sauted vegetables, which add crunch to dosa. Seasonal vegetables can be used to make stuffing. This recipe can be added to weight loss plan because of its nutritional value. It can be eaten in breakfast or even in dinner. It goes well with coconut chutney. Infact, it can be eaten with pudina(mint) chutney or spicy garlic chutney too. Coconut chutney also is healthy to include in our regular diet.

Cooking time: 20 mins

Ingredients:
  • Moong - 1 cup
  • Water - 1 3/4 cup
  • Salt to taste
  • Roasted cumin powder - 1/4 teaspoon
For stuffing:
  • Cooking oil - 2 tablespoon
  • Green chillies - 1 big (chopped)
  • Garlic - 5 6 cloves (chopped)
  • Onions - 2 small size (sliced)
  • Cabbage - 2 1/2 cup (shredded)
  • Carrot - 1 medium size
  • Green Capsicum - 1 medium size
  • Salt to taste
  • Black pepper powder - 1/4 teaspoon
  • Garam masala - a pinch

Method:
  1. Firstly, soak moong in a deep vessel filled with water for an hour.
  2. Meanwhile lets prepare stuffing. For stuffing, in a pan, add cooking oil. Let it heat well
  3. Then add chopped green chillies, ginger and garlic. 
  4. Saute it for a minute, then add sliced onions. 
  5. Saute it till it becomes translucent or pinkish in colour. 
  6. Then add cabbage, it will shrink in size so we will add this first.
  7. Once cabbage shrinks, add carrot. Saute for 5 minutes.
  8. Then add green capsicum. Saute it for 2 minutes in open pan. 
  9. Then cover pan with a lid till vegetables get cooked.
  10. Make sure not to over cook vegetables. We will keep vegetables crunchy.
  11. Now add spices: black pepper powder, salt to taste and garam masala. 
  12. Mix spices well and switch off the flame. Transfer it into another bowl and let it cook
  13. After one hour, grind moong with little water.
  14. Make it into paste and let it be slightly coarse.
  15. Add moong paste into a large bowl. Pour water into it little by little till it becomes dosa consistency.
  16. Then add salt to taste and roasted cumin powder. 
  17. Heat tawa, once it becomes hot. sprinkle some water and clean tawa with a towel cloth.
  18. Then add moong dosa batter. Spread it to make it thin dosa.
  19. Cook on both the sides and then spread stuffing on one side.
  20. Fold the dosa.
  21. Serve hot with coconut chutney.
