Masala Suran

Suran is also popularly known as jimikand or elephant foot yam. It is very high in fibre, which helps in digestion. It is also helpful for diabetic patients as it does not allow blood glucose to increase. It helps to clean intestine, thus helps to reduce weight. It is available throughout the year so it can be included in regular diet. Infact, it is also eaten widely during fast. It can be prepared in different ways. Today i will show you my version of "Masala Suran".

Preparation Time: 5 mins
Cooking time: 15 mins

Ingredients:
  • Suran - 1 cup
  • Water - 1/2 cup
  • Salt to taste
  • Cooking oil - 2 teaspoon
  • Curry leaves - 4 to 5 leaves
  • Zeera(cumin seeds) - 1/4 teaspoon
  • Red chilli powder - 1 teaspoon
  • Coriander cumin powder - 3/4 teaspoon
  • Garam masala - a pinch
  • Salt to taste
  • Coriander(chopped) - for garnishing

Method:
  1. Cut suran into 1 inch pieces. Boil it in cooker. Add salt before boiling. Add "kala namak" or "sanchar" instead of iodized salt if you want to eat it in fast.
  2. Let boiled suran cool completely.
  3. In a pan, add oil. Once the oil heats, add curry leaves. 
  4. Add zeera and let it turn little brown. Now add spices, red chilli powder, coriander cumin powder, garam masala and salt.
  5. Then add around 2 teaspoon water to spices and then add boiled suran.
  6. Mix it gently as boiled suran becomes very soft.
  7. Switch off the flame. Transfer it into bowl and add chopped coriander.
  8. Serve hot.
