Dahi Masala Bhindi

Dahi Masala Bhindi creamy gravy made with curd. Curd is cooked with other spices. It tastes spicy and tangy because of curd is added into it. It is usually eaten with chapati or parantha. It does not take a long time to prepare and gives a change from regularly made bhindi(lady's finger) sabji. So when you have guests at home, you can make this and surprise them with your cooking skills.

Ingredients:
- Cooking oil - for frying
- Onion - 3 medium size
- Bhindi(Lady's finger) - 250 grams
- Green chillies - 3 small size
- Ginger - 1/2 inch
- Garlic: 3 cloves
- Cooking oil - 1 tablespoon
- Cumin seeds(Zeera) - 1/4 teaspoon
- Curry leaves - 4 5 leaves
- Curd - 3 tablespoon
- Water - 3/4 cup
- Red chilli powder - 3/4 teaspoon
- Turmeric powder - a pinch
- Dhaniya zeera powder - 1/2 teaspoon
- Garam masala - a pinch
- Salt to taste
Method:
- Firstly, fry onions until they turn slightly red from sides. Add green chillies, ginger and garlic and fry them too.
- Let them cool down. Meanwhile fry bhindi till it changes colour and its side turn golden brown.
- Make fine smooth paste of fried onions, chillies, ginger and garlic.
- In the same pan, add 1 tablespoon oil. Let it heat well.
- Add cumin seeds and curry leaves.
- Then add onion paste with little water if paste is too thick.
- Saute it for 2 minutes.
- Add spices: red chilli powder, turmeric powder, dhaniya zeera powder, garam masala and salt.
- Saute spices for a minute or two.
- Then add curd. Adjust it accordingly. Add less curd if you want it less tangy.
- Once curd is cooked, add water little by little.
- If we add too much water all together, it will take a lot of time to cook.
- Let water boil on medium-high flame.
- Then add fried bhindis.
- Mix it well and cover it for 5 minutes on low-medium flame.
- Serve it with chapatis or parantha.
