Vegetable Masala Oats
Oats are high in proteins so it is best eaten post workout. There are number of companies that sell plain oats and masala oats too. You can pick any company of your choice. My preference has been quaker oats always. Oats can be prepared in different styles - be it a sweet dish or savory. Vegetable oats can be made with seasonal vegetable which add to nutrition level. Lets look at my version of vegetable masala oats.

Cooking time: 15 mins
Ingredients:
- Roasted oats - 1 cup
- Cooking oil - 1 tablespoon
- Onion - 1 big size (chopped)
- Green chilli - 1 medium size (chopped)
- French beans - 1/4 cup (chopped)
- Cauliflower - 1/4 cup (chopped)
- Carrot - 1//4 cup (chopped)
- Green peas - 1/4 cup
- Lauki(bottle gourd) - 1/4 cup (chopped)
- Water - 2 1/2 cup
- Spices:
- Red chilli powder - 1/2 teaspoon
- Coriander cumin powder - 1/2 teaspoon
- Garam masala - a pinch
- Black pepper powder - a pinch
- Salt to taste
Method:
- Roast oats in a pan on low-medium flame. It takes about 2 minutes. Once you smell the aroma you can transfer it on a plate.
- In the same pan, add oil. When oil heats, add chopped onions and green chillies.
- Let onion become translucent or pinkish. Then add all the vegetables. Saute it for 2-3 minutes.
- Now add all the spices and mix it well.
- Add little water so spices do not burn.
- Cover it and let vegetables cook up to 80%. It will take around 7-8 minutes.
- Then add water and let it boil.
- When water starts to boil, then add roasted oats.
- Mix it well and cover it. Let oats cook. It will take around 3-4 minutes.
- Once the oats are cooked and it absorbs water, turn off the flame.
- Serve hot.
