Vegetable Cutlet
Vegetable cutlet is a perfect starter recipe. Raw vegetables are added so it gives crunch in the mouth and is coated with rava(semolina), which adds to the crunchiness. It can be served with ketchup or green chutney. Lets look at the ingredients and steps of cooking it. I have added video link so you can watch video too.

Ingredients:
- Potatoes - 3 medium sized (boiled)
- Cabbage - half cup (shredded)
- French beans - quarter cup (chopped)
- Carrot - half cup (grated)
- Cauliflower - half cup (grated)
- Coriander leaves - 1/2 cup (chopped)
- Garlic paste - 1/2 teaspoon
- Green chillies - 1 teaspoon (chopped)
- White bread - 6 slices
- Salt to taste
- Red chilli powder - 1 teaspoon
- Coriander cumin powder - 1/2 teaspoon
- Garam masala - 1/4 teaspoon
- Oil - for frying
Method:
- Boil and peel potatoes. Mash or grate them in a bowl.
- Add vegetables: cabbage, french beans, carrot, cauliflower and chopped coriander.
- Now add chopped green chillies and garlic paste.
- Then comes spices: salt to taste, red chilli powder, coriander cumin powder and garam masala. Mix all the ingredients well.
- Cut bread slices in pieces and mix it well.
- Now shape cutlets, preferably in cylindrical shape.
- Coat cutlets in rava(semolina).
- Deep fry all the cutlets on medium-high flame.
- Serve hot with ketchup or green chutney.
